Milled from short grain sweet rice, this flour is useful for certain applications in gluten-free baking/cooking. Traditionally, it has been utilized as a sauce thickening alternative to corn starch. Contemporary applications include microwave mochi. Produced in California by Koda Farms since the 1940s.
